Vegetable Soup

On today's menu we have vegetable soup! This is a flavorful comfort food that is not only delicious but also good for you! This soup is packed with vegetables and protein. The smell of this simmering in the crock pot will have everyone on the edge of their seats waiting for dinner time! Vegetable soup is a timeless recipe. I can remember my great grandmother serving me vegetable soup as a child. What a sneaky way to get a child to eat their veggies! No one can resist a bowl of soul warming soup! I love to serve this soup on Sunday’s. I can just throw it in the crock pot in the morning and come home from church to a ready to eat delicious lunch! This is such an easy meal with few ingredients which makes it perfect for serving a large crowd so feel free to invite the family over for an after church get together. Speaking of easy, this is a perfect meal to make when you are sick. It is much better than any soup you can get from a can! And mommas we know even when we are sick, we still have to cook. So do yourself a favor and give this simple delicious recipe a try!
Ingredients
1 lb ground meat. I used sausage. You can use beef, chicken, turkey, etc.
Frozen mixed vegetables 1 12 oz bag
3 Potatoes peeled and diced
3-4 cups tomato juice
Garlic powder to taste
Season salt to taste
Instructions
Begin simmering frozen veggies, tomato juice, potatoes, and seasonings together.
brown ground meat and strain any extra grease off of meat
Add meat into the soup.
Simmer until veggies are soft
Serve with crackers!
This meal can be cooked in a crock pot or stove top!
