Stuffed Peppers

Today I want to share this savory flavorful recipe that I got from my grandmother. I always loved this meal when my grandmother made it. However, I did decide to make a few changes of my own. I added some spices to my ground beef to add even more flavor! This recipe is fairly easy, but you will need about an hour or so of oven time.

Let's get started!


Ingredients

  • Green bell peppers I used 3 you can adjust the recipe to however many you need.

  • 1 lb ground beef

  • 1 package Zatarain’s spanish rice

  • 1 can Rotel

  • Tomato juice

  • Cumin to taste

  • Chili powder to taste

  • Garlic powder to taste


Instructions

  1. Preheat oven to 375

  2. Brown ground beef

  3. Add chili powder, garlic, and cumin to taste to meat

  4. Prepare Spanish rice according to directions I use Rotel in place of the diced tomatoes it calls for

  5. Cut the stem and a hole big enough to add the rice meat mixture in the pepper

  6. Place peppers in a casserole dish

  7. Add ground beef to rice and mix in tomato juice to mixture

  8. Fill each pepper with rice mixture

  9. Add about an inch of tomato juice to the bottom of the pan

  10. Cover and cook for an hour or until peppers are tender

  11. Top with queso
